How do you deal with the fact...

I got used to it. However, sometimes I'll catch one of those big game fellows.
The problem is, I am daydreaming that I am a GM, already defeated Stockfish, Carlsen and Lc0.
Daydreams always lead to being a fool and unsuccessful.
You take the little wins where you can get them. Maybe youre a big fish in a small pond.

In my job a lot of people play chess so im fortunate. Some have played for decades with no improvement or want to improve. These guys literally dont realise how bad they are, which is a good thing, they play solely for enjoyment. Some of them never even realised there is a rating system. Chess is just a pasttime they played with their dad a couple of times when they were younger and still play occassionaly now. Its a refreshing change of pace to play with them.
When I first re-discovered Chess in late 2020, I was wondering what it would take to become a titled player (and still do) and got a coach. I realized through 2021 that it would take a lot of dedicated time, effort & energy to even try. It was all a matter of trade-off as an adult Chess player with family responsibilities. So, I had to keep my Chess playing to be recreational while I focus primarily on work & other personal goals. I won't say that sometimes I don't day-dream, but I don't really feel bad about the fact that I may never be a CM/FM/NM, let alone a GM. It's a matter of personal priorities and just like while I enjoy cycling or football, that I would never be competing at the top-level.

Chess is less a sport for most people and more a hobby. Nobody accuses a amateur painter of never becoming a famous artist, or a chef of not being the head chef of a 3-star restaurant.
You are statistically not an 200/300. That your chess is decent, that you're decent, and hundreds if not thousands of players exist who are objectively inferior to you.
